Green Tea Rice Cakes (Puto)

rice cakes on a plateBreakfast, lunch or dinner -- rice cakes, or puto, are traditional Filipino desserts that grace the table at all hours of the day (at least at my house)! Why, you ask? Well, why don't you make some and find out. Bwa ha ha! Each family has their own recipe, considering that this is so basic (not referring to pH here, by the way), but I modified my mom's recipe a bit by using coconut milk and matcha powder (green tea powder). The following recipe makes 12 rice cakes:

2 cups brown rice flour
1 tbsp baking powder
1/2 cup brown sugar or 1/2 cup carob nut powder (sugar substitute)
2 cups coconut milk
1 tbsp matcha powder

1. Mix all these ingredients in a bowl with a large spoon, then ladle into the muffin-sized cups that came with your steamer.

bowl with mixed ingredients2. Prepare your steamer by boiling the water. When the water is already boiling, place the cups into the second pan layer of the steamer (the layer with the steam holes in the bottom of the pan). Place this pan layer over the pan with the boiling water.
